Cheese Plate with Baked Brie and Spiced Apple Compote
Upgrade your cheese plate with a show stopping baked brie. The warm and creamy cheese is perfect on fresh sliced bread or crackers and topped with this spiced savory apple compote.
Ingredients
5 red apples (peeled and diced in 1/4 inch cubes)
pinch of ground cloves
1/8 tsp. ground ginger
1/8 tsp. cinnamon
1/8 tsp. allspice
1/8 tsp. ground white pepper
3 tbsp. sugar
pinch of salt
1/2 tsp. fresh lemon juice
1 wheel of Brie
Assorted soft and hard cheese, dried fruits, nuts, & crackers
How To Make
Place half of the diced apples in a saucepan with spices, sugar, salt, and lemon juice. Cook on medium heat for about 15 minutes until apples breakdown and lose their shape and look like applesauce. Add the remaining half of the apples and cook for another 10 minutes or until these newly added apples are tender, but retain their shape. Remove from heat and allow to cool. The compote can be made ahead and last in the refrigerator for a few days.
Arrange a platter with your assorted cheeses, dried fruit, nuts, and crackers. Place the apple compote in a ramekin in the center of the platter. Be sure to leave room on the platter for the brie. The cheese plate can be arranged prior to serving and left in a refrigerator, but make sure to remove it to allow the cheeses to temper on your counter for at least 30 minutes prior to serving.
Preheat the oven to 350F. 15 minutes prior to serving, place the brie in an ovenproof dish and bake for 10 minutes. If you have, switch your oven to broil on high, and place the cheese under the broiler to brown for 3-5 minutes. Carefully remove the brie from the oven, allow to cool for 1 minute, and then place on the platter and serve warm.
