Vineyards that are classified as high elevation, or high altitude, mean lower temperatures and more ventilation for the vines, which slows ripening and preserves acidity. The extreme conditions of these vineyards produce high-quality fruit and give us very dark and concentrated wines, but elegant, fresh, and harmonious at the same time.
